Rava Upma

A quick savoury breakfast from the south Indian kitchen, light and endlessly adaptable.

A steel bowl of pale fluffy savoury semolina with mustard seeds, curry leaves

Ingredients

  • 1 cup Vishnu Foods Suji
  • 2½ cups water
  • 2 tablespoons ghee or oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 onion, finely chopped
  • 1 green chilli, slit
  • 8 curry leaves
  • 1 teaspoon grated ginger
  • salt to taste
  • coriander and lemon to finish

Method

    Dry roast the suji on a low flame until it smells fragrant but has not coloured, then set it aside.

    Heat the ghee, splutter the mustard seeds, add the urad dal and fry until golden.

    Add the curry leaves, green chilli, ginger and onion, and cook until the onion softens.

    Pour in the water, add salt and bring to a rolling boil.

  5. 05

    Lower the flame and add the roasted suji in a slow stream, stirring constantly to keep it lump-free.

    Cover and cook for three minutes, then finish with coriander and a squeeze of lemon.
