RECIPE / SUJI AND MAIDA
Rava Dosa
A lacy, crisp dosa that needs no fermentation — the batter should be as thin as buttermilk.

Ingredients
- 1 cup Vishnu Foods Suji
- ½ cup rice flour
- ¼ cup Vishnu Foods Maida
- 3½ to 4 cups water
- 1 onion, finely chopped
- 1 green chilli, chopped
- 1 teaspoon cumin seeds
- 10 curry leaves, chopped
- 1 teaspoon grated ginger
- salt to taste
- oil or ghee for cooking
Method

Whisk the suji, rice flour, maida, salt and water into a very thin, watery batter with no lumps.

Stir in the onion, chilli, cumin, curry leaves and ginger, and rest the batter for twenty minutes.

Stir well again — the batter settles quickly and must be mixed before every dosa.

Heat a tawa until very hot, then pour the batter from a height in a circular motion, filling gaps but never spreading with a ladle.

Drizzle oil around the edges and cook on a medium-high flame until the dosa is crisp and golden.

Fold and serve immediately with coconut chutney.
